If you’re on the hunt for a simple fried rice recipe, I promise it doesn’t get much easier than this! It only takes 15 minutes to make this classic Chinese dish.
Ingredients
- 8oz microwave rice pack or precooked rice
- 8-12 oz Uncooked shrimp-peeled and deveined
- 2 eggs
- 1 small onion
- 3 cups frozen veggie mix (corn, peas, carrots, broccoli..)
- 3-4 tbsp soy sauce or adjust per taste
- 2 tbsp sesame oil or more per taste
- Salt and pepper per taste
- Oil or butter 2 Tbsp
Instructions
- Microwave rice per package instructions or use already precooked or leftover rice.
- On low-medium heat cook or sear shrimp lightly until they turn pink (about 30 seconds per side). Season lightly and move to a separate bowl.
- To the same pan add chopped onions and sauté until soft.
- Add frozen veggies mix. Mix until heated through and add cooked rice, mix again.
- Add whisked eggs and mix quickly breaking down the eggs.
- Add the soy sauce, sesame oil and seasoning. Mix and taste.
- Add the shrimp back into the pan and give it one last mix. Serve right away!
