Fresh Strawberry Cake

Scrumptious Strawberry Cake that is sweet, moist and delicious! Loved by the kiddos and adults. Make sure to top it with the most delicious strawberry sauce that consists of two ingredients only!

Ingredients

  • 2 large eggs, room temperature
  • 1 cup sugar any (i used coconut) + 1/4 or 1/2 for Sauce
  • 1/2 cup neutral oil
  • 2 cups Flour
  • 2 tsp baking powder
  • 1 cup plain yogurt or sour cream
  • 16 oz strawberries + 16 oz for Sauce
  • Powdered sugar, optional

Instructions

  1. Preheat oven to 375
  2. Wash and pat dry 16 oz of strawberries. Slice the first 8 oz into thin pieces. Cut the other 8 oz into halves.
  3. In a large bowl, beat together 2 eggs with 1 cup sugar on high speed for about 5 minutes or until lighter in color and thickens.
  4. Add yogurt and oil. Mix again until smooth.
  5. In a separate bowl, mix flour and baking powder.
  6. Add to the egg batter in thirds, mixing on low speed until smooth and silky.
  7. Pour half of the batter onto a greased cake pan ( 9 or 10 inch)
  8. Top with the sliced strawberries.
  9. Pour the rest of the batter and smooth out. Top with the Strawberry Halves, pressing down lightly.
  10. Bake for 50-55 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from the pan.
  11. While cake is baking, prep your sauce. Blend the remaining 16 oz of strawberries with 1/4 – 1/2 cup of sugar until smooth.
  12. One cake has cooled down. Sprinkle powdered sugar, optional. Cut into individual slices and serve with the Strawberry sauce!
