Super quick and easy to make, these roasted potatoes will become a staple in your house! The perfect side dish for any meal.
Ingredients
- 8 Large Yellow Potatoes
- 2 Tsp Salt Seasoning
- 1/4 cup Neutral Oil
- 1 Cup shredded cheese- Mexican, cheddar, mozzarella
- Optional: Scallions or fresh herbs to top with.
Instructions
- Wash and pat dry the Potatoes. Preheat oven to 400.
- Dice into 1/2 inch cubes. Peeling is optional.
- Add oil, seasoning and mix well.
- Spread the potatoes onto a baking sheet lined with foil.
- Bake at 400 uncovered for 40-45 minutes. Sprinkle with cheese and mix.
- Bake until cheese has melted and potatoes are soft. Optional, top with scallions or fresh herbs right before serving!
