4 Ingredient Roasted Potatoes

Super quick and easy to make, these roasted potatoes will become a staple in your house! The perfect side dish for any meal.

Ingredients

  • 8 Large Yellow Potatoes
  • 2 Tsp Salt Seasoning
  • 1/4 cup Neutral Oil
  • 1 Cup shredded cheese- Mexican, cheddar, mozzarella
  • Optional: Scallions or fresh herbs to top with.

Instructions

  1. Wash and pat dry the Potatoes. Preheat oven to 400.
  2. Dice into 1/2 inch cubes. Peeling is optional.
  3. Add oil, seasoning and mix well.
  4. Spread the potatoes onto a baking sheet lined with foil.
  5. Bake at 400 uncovered for 40-45 minutes. Sprinkle with cheese and mix.
  6. Bake until cheese has melted and potatoes are soft. Optional, top with scallions or fresh herbs right before serving!
