Loaded Chicken Bake

This family-friendly, make-ahead meal is a great weeknight dinner! This is delicious, creamy and loaded with cheese and bacon goodness.

Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  •  6 oz cream cheese softened
  • 1/4 cup mayonnaise
  • 1/2 cup crispy bacon crumbled (about 8 slices)
  • 1/2 cup green onions chopped (about 4 onions)
  • 1.5 cups Mexican or cheddar cheese shredded
  • Salt about 1 tsp
  • Extra bacon and green onions for garnish, optional

Instructions

  1. Preheat oven to 400
  2. To a large bowl, add cream cheese, mayo, cheese, green onions and bacon. Mix well
  3. Place the chicken in a baking dish and season with salt lightly.
  4. Spread the cheese mixture over the chicken. Top with remaining cheese.
  5. Bake for 45-55 minutes or until chicken is cooked through. (For chicken thighs)
  6. Garnish with additional bacon and green onions and serve hot!
