Ingredients
- 15-20 mini peppers
- 5 oz canned chicken drained
- 3-4 Tbsp your favorite Ranch
- 4 oz shredded cheddar/Mexican cheese
- optional add ins – Bacon bits, scallions.
Instructions
- Preheat oven to 350
- Wash and dry peppers. Cut off the tops of the peppers and clean out the inside.
- Drain the canned chicken, add to a bowl. Add ranch and cheese. Mix well.
- Stuff each mini pepper with about 1 tbsp chicken mix.
- Bake for 10 min, Sprinkle cheese on top and bake for 3-4 minutes more It until cheese is melted.
- Cool for 2-3 minutes and serve warm or room temperature.
