A delicious, hearty soup to warm up with on a cold, blustery day. This homemade Soup is packed with potatoes, ground beef, and diced veggies in a creamy cheese soup. So easy to make and always a hit for dinner.
Ingredients
- 1 lb Ground beef
- 4 cups peeled and chopped Potatoes
- 1 yellow Onion finely chopped
- 1 cup thinly sliced Carrots
- 4 Garlic cloves minced
- 1 cup thinly sliced Celery
- 1 large pepper diced
- 32 oz Chicken broth
- 8-12 oz Cheddar cheese
- 3 Tbsp Butter
- 1/4 cup Flour
- 1 1/2 cups half & half or milk
- Optional, Sour cream and scallions to top
- Salt & Pepper per taste
Instructions
- In a large soup pot, over medium-high heat, add peppers, carrots, celery, onion, salt, and pepper.
- Sauté for a couple of minutes and add ground beef. Cook until almost cooked through (slightly pink).
- Add flour, mix well for 1-2 minutes.
- Add the chicken broth, half & half and chopped potatoes. Bring to a boil and then cover with a lid, reduce heat to medium, and let simmer for 10-15 minutes or until potatoes are tender.
- Add shredded cheese, and season per taste. Stir together until cheese is melted. About 5 minutes. Take off the heat and stir in the sour cream and scallions.
