This Cabbage soup is hearty, comforting and loaded with a ton of veggies and Protein! This is our favorite Ukrainian soup!

Ingredients
- 1/2 of a medium Cabbage
- 2 Carrots
- 1/2 of a small onion
- 5-7 Large potatoes
- 1.5 Lb pork Meat (ribs, roast, boneless)
- 8 cups water or more
- 1-2 Tbs butter to saute
- Salt and pepper for seasoning (recommend better than bullion)
- 1 Tbsp Vinegar or apple cider vinegar (you can omit if you dont like sour soups)
- 1/2 cup Heavy Cream
- 2 Bay leafs (optional)
- 2 Tbsp Dill (optional)
- Sour cream (optional, if you love it in your soups)
Instructions
- On medium heat add water to a large pot, salt and rinsed meat. You want the water to be slightly salted for the meat to cook in.
- Cook/boil for about 30 minutes or until meat is tender. Removing white access from the meat.
- Meanwhile, prep the veggies. Peel and chop potatoes to bite size pieces. Shred carrots and cabbage.
- In a pan, melt the butter. Saute carrots and onions on low-medium heat for couple minutes, mixing well until cooked through. Season lightly.
- Add potatoes to the pot with meat once meat is tender. ( you may need to add more water at this point, depending how much evaporated from the meat)
- Once potatoes are almost cooked through. Add the carrot and onion mix to the pot, seasoning (i add better than bullion) and taste for seasoning.
- Add shredded cabbage, vinegar, and bay leaf. Mix well. Cook for another couple minutes until cabbage is soft.
- Add heavy cream. Once your soup is boiling, taste for seasoning one more time and remove from heat. Add fresh dill (optional)
- Serve with sour cream!
