You have to try this easy and delicious dish! The fish turns out flaky, soft and blends so well with the vegetables! And the best part is that you can prep this ahead and just pop it in the oven right before serving!
Ingredients
- 3 Swai Fillets (or any other other white like cod, or tilapia..)
- 3 Tbsp Mayo
- 1 cup shredded cheese, any
- 1 Tbsp minced garlic or garlic paste.
- 6 mini colorful peppers
- 1 small zucchini
- 1 small yellow squash
- 1 small onion
- 1/2 cup shredded carrots
- Favorite seasoning (i used Johnny’s seasoning salt)
Feel free to omit or substitute the vegetables
Instructions
- Preheat oven to 400 F
- Prep your veggies. Shred carrots, slice the rest of the vegetables into thin circles
- Cut the fish into 3 inch pieces
- Mix Mayo, 3/4 cheese and garlic
- Pre oil your casserole dish
- Spread half of the vegetables to the bottom. Season lightly
- Top with all the fish pieces and spread Mayo mix all over the fish
- Top with the rest of the vegetables. Season lightly.
- Bake covered at 400 for 45-50 minutes.
- Drain out most of the liquid. Sprinkle with the rest of the cheese and broil at 500 uncovered till melted and golden brown.
