Cheesy Chicken & Ranch Stuffed Peppers

Delicious quick & easy Chicken Pepper Bites are a perfect appetizer for your next party, lunch or just a midday snack! With just 4 staple Ingredients this will become a favorite go to at your home!

Ingredients

  • 15-20 mini peppers
  • 5 oz canned chicken drained
  • 3-4 Tbsp your favorite Ranch
  • 4 oz shredded cheddar/Mexican cheese
  • optional add ins – Bacon bits, scallions.

Instructions

  • Preheat oven to 350
  • Wash and dry peppers. Cut off the tops of the peppers and clean out the inside.
  • Drain the canned chicken, add to a bowl. Add ranch and cheese. Mix well.
  • Stuff each mini pepper with about 1 tbsp chicken mix.
  • Bake for 10 min, Sprinkle cheese on top and bake for 3-4 minutes more It until cheese is melted.
  • Cool for 2-3 minutes and serve warm or room temperature.
