You will absolutely love this easy but delicious soup recipe!! Its creamy, hearty and filled with veggies and protein! So loved by the adults and kiddos.
Ingredients
- 2 tbsp butter and 2 tbsp oil
- 1/4 cup flour
- 1/2 cup diced celery
- 1 cup finely diced onion
- 2 garlic cloves minced
- 1 cup finely shredded carrots
- 4-6 diced boneless skinless chicken thighs
- 1 Tbsp oil to sauté chicken
- 32 ounce chicken broth
- 4 cups half and half
- 2 cups chopped fresh spinach
- Salt and pepper per taste
Instructions
- Wash, dice/grate veggies. Dice chicken into bite size pieces .
- Heat olive oil and butter in a large pot over medium heat. Add the onion, celery, carrots and garlic and sauté until the onion becomes translucent.
- In the meantime in a separate pan sauté chicken on high heat for 1 min per side. Set aside.
- Whisk in the flour slowly to the pot. Let the flour mixture cook for about a minute and then stir in the chicken broth and half-and-half.
- Add the chicken, spinach, and seasonings. mix well.
- Simmer the soup over medium-low heat until it is heated through. ENJOY!!
