- 6 large eggs
- 1 cup shredded cheese any
- 1/2 cup cherry or diced tomatoes
- 1/2 cup diced peppers
- 1 cup arugula
- 1/3 cup heavy cream
- 1 tbsp butter or oil
- 1/2 tsp Salt
- 1/4 tsp pepper
- Optional- Bacon, sausage, scallions, fresh mozzarella
Instructions
- Preheat the oven to 400F.
- Whisk eggs, heavy cream and salt until smooth.
- Cut or dice tomatoes. Chop bell peppers into small pieces.
- Coat the sides of a baking dish with butter or oil. Spread vegetables on the bottom of the pan.
- Pour over the egg mixture. Add any other additional toppings. Sprinkle the cheese on top.
- Bake for 15 to 17 minutes, or until the edges are set and the top is lightly browned.
