Fluffy pancakes stuffed with jam

You’ll love how easy this fluffy pancake recipe is, but filled with Jam takes the simple pancake to another level! This is a simple and quick breakfast, snack or dessert.

Ingredient’s

  • 2 cups all purpose flour
  • 4 Tbsp granulated sugar
  • 4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 cups Milk
  • 4 Tbsp unsalted Butter melted
  • 4 Tbsp or more unsalted butter or oil to fry
  • 2 tsp pure vanilla extract
  • 1 large Egg
  • 3/4 cup jam

Instructions

  1. Combine the dry ingredients in a large-sized bowl. Make a well in the center and add the milk, melted butter, vanilla and egg.
  2. Whisk the ingredients together until smooth (some lumps are fine). Add more milk to get a smoother consistency.
  3. Heat a nonstick pan over medium-low heat coated with butter to grease the pan. Add 1 tbsp of batter onto the pan smooth out gently into a round shape with the back of the spoon.
  4. Add 1/2 tsp of jam to the middle, and top with another tbsp of the batter to cover completely.
  5. When the underside looks golden and bubbles begin to appear on the top, flip and cook on the other side until golden. Repeat with remaining batter.
