Homemade Almond Joy Bars

A sweet coconut filling dipped in chocolate and ready for snacking in just about 30 minutes! You will love this make-at-home version of Almond joy Bars.

Ingredients

  • 3 cups unsweetened shredded coconut
  • 14 ounce can sweetened condensed milk
  • 15 ounces milk chocolate or dark chocolate 
  • 45-55 almonds

Instructions

  1. In a bowl combine the coconut and sweetened condensed milk.
  2. With clean and slightly wet hands, shape the coconut mixture into approximately 20-25 logs placing each onto a tray with parchment paper .
  3. Top each log with 2 almonds and press gently. Freeze logs for about 20 minutes.
  4. In the microwave melt the chocolate in 20 seconds intervals until completely melted. Stir well between each interval.
  5. Use forks to dip each of the coconut bars into the chocolate, then transfer back to a tray with parchment paper . Allow the chocolate bars to set. Enjoy! (if the logs start to get soft while you are dipping in chocolate, just put then back in the freezer to harden!)
