This chicken comes out amazingly juicy, has crispy skin, and is full of flavor. This is sure to be a dinner recipe that the entire family will enjoy or a hit at your next party!
Ingredients
- 2-2.5 lb chicken drumsticks
- 1/4 sweet onion
- 2-3 mini bell peppers red or orange
- 3 Garlic cloves
- 2 Tbsp mayo
- 1/2 Tbsp salt
- 1/2 tsp pepper
- Chopped scallions for garnish, optional
Instructions
- For best flavor- soak the drumsticks in salted water for at least couple of hours- overnight. Wash off and pat dry the chicken. Add to ziploc bag.
- In a blender, purée the onion, peppers, mayo, garlic and seasoning.
- Pour the marinade over the drumsticks. Close the bag, letting all the air out and massage with your hands to coat the chicken.
- Store in the fridge overnight.
- Preheat oven to 400
- Line a baking pan with parchment paper or foil and bake chicken for 45 minutes then turn drumsticks over and bake another 15 minutes. Serve right away!
