Unbelievably simple and delicious protein packed pancakes that are soft and fluffy! Serve with fresh fruit, jam and or sour cream.
Ingredients
- 16 oz Cottage cheese
- 1 cup flour
- 4 eggs
- 1 tbsp baking powder
- 2 tbsp sugar or more per taste
- 1/2 cup neutral oil
Instructions
- Drain liquid from cottage cheese
- To a bowl, add cottage cheese and eggs. Mix well.
- Add baking powder, sugar and flour. Mix well.
- To a large skillet add oil on low medium heat.
- Add 1 tbsp of cottage cheese mix leaving some room in between each pancake. Fry until golden brown on each side.
- Serve with fresh fruit, jam and or sour cream.
