Loaded Cheesy Stuffed Peppers

These stuffed Peppers are quick and easy to make! With just four main ingredients this meal is ready in 25 minutes. Great for a quick weekday dish or a fun party appetizer.

Ingredients

  • 16oz ground beef
  • 4 medium bell peppers (or 2.5 lb mini peppers)
  • 8oz microwaveable packaged rice (or any other cooked rice)
  • 8 oz shredded cheddar cheese or Mexican
  • Salt and pepper per taste
  • 1 tbsp oil
  • Chopped scallions or fresh herbs, optional.

Instructions

  1. Preheat oven to 350F. Spray a baking sheet with oil spray. 
  2. Heat rice per package instructions
  3. On medium heat warm up a skillet sprayed with oil. Add ground beef and sauté for couple minutes until slightly pink. Season per taste.
  4. Add cooked rice and cheese. Mix well until melted. Take off heat.
  5. Cut each pepper in half lengthwise and remove the seeds. Fill with the ground beef mixture.
  6. Sprinkle cheese, scallions or fresh herbs and bake for 12-15 minutes or until peppers have softened. Serve right away!
