These stuffed Peppers are quick and easy to make! With just four main ingredients this meal is ready in 25 minutes. Great for a quick weekday dish or a fun party appetizer.
Ingredients
- 16oz ground beef
- 4 medium bell peppers (or 2.5 lb mini peppers)
- 8oz microwaveable packaged rice (or any other cooked rice)
- 8 oz shredded cheddar cheese or Mexican
- Salt and pepper per taste
- 1 tbsp oil
- Chopped scallions or fresh herbs, optional.
Instructions
- Preheat oven to 350F. Spray a baking sheet with oil spray.
- Heat rice per package instructions
- On medium heat warm up a skillet sprayed with oil. Add ground beef and sauté for couple minutes until slightly pink. Season per taste.
- Add cooked rice and cheese. Mix well until melted. Take off heat.
- Cut each pepper in half lengthwise and remove the seeds. Fill with the ground beef mixture.
- Sprinkle cheese, scallions or fresh herbs and bake for 12-15 minutes or until peppers have softened. Serve right away!
