This family-friendly, make-ahead meal is a great weeknight dinner! This is delicious, creamy and loaded with cheese and bacon goodness.
Ingredients
- 2 lbs boneless, skinless chicken thighs or breasts
- 6 oz cream cheese softened
- 1/4 cup mayonnaise
- 1/2 cup crispy bacon crumbled (about 8 slices)
- 1/2 cup green onions chopped (about 4 onions)
- 1.5 cups Mexican or cheddar cheese shredded
- Salt about 1 tsp
- Extra bacon and green onions for garnish, optional
Instructions
- Preheat oven to 400
- To a large bowl, add cream cheese, mayo, cheese, green onions and bacon. Mix well
- Place the chicken in a baking dish and season with salt lightly.
- Spread the cheese mixture over the chicken. Top with remaining cheese.
- Bake for 45-55 minutes or until chicken is cooked through. (For chicken thighs)
- Garnish with additional bacon and green onions and serve hot!
