This fresh apple cake is very moist with tender apples and a sweet maple glaze, and it’s all made from scratch! This is the ultimate fall cake, perfect for breakfast, brunch or dessert.
Ingredients
- 4 Large Apples
- 3 eggs
- 1 cup Flour
- 1 cup Sugar
- 1 cup powdered sugar (glaze)
- 1/2 cup Maple syrup (glaze)
- 1.5 Tbsp milk (glaze)
- 2 Tbsp butter (glaze)
Instructions
- Preheat oven to 350F.
- Wash, peal and dice apples into one inch pieces.
- Using a hand mixer, beat eggs with sugar, until three times the volume.
- Using a spatula, fold in flour by thirds. Do not overmix and lose the fluffiness.
- Lay out the diced apples on the bottom of a 9 inch pan. Cover apples with cake batter. Spread the batter with spatula if needed.
- Bake it at 350F for 40 minutes, check using a toothpick.
- While the cake is cooling, make the maple glaze. Add maple syrup to a saucepan and boil for 5 minutes on low heat. Remove from heat and add butter. Once melted add the milk and powdered sugar. Whisk until smooth.
- Once cake has cooled to room temperature, pour the glaze over the apple cake. Glaze will set within minutes. Serve right away!
