Marinated Mushroom Salad -4 main ingredients!

Even if your not a mushroom lover, this salad will win you over! It is everything you want in a salad. Fresh, garlicky, creamy, and very filling! And the best part is you can make it in advance.

Ingredients

  • 16 ounces boneless pork loin chop
  • 30 ounce can marinated mushrooms
  • 1 can of sweet corn
  • 1.5-2 cups of shredded mozzarella or mexican cheese
  • 5-6 garlic cloves minced
  • 5-6 Tbsp Mayo
  • Salt and pepper to your tasting

Instructions

  1. Wash and cook the meat in salted boiling water until meat is cooked through. 15-20 minutes. Let the meat cool to room temperature.
  2. Dice the meat into small cubes, add to large bowl.
  3. Rinse, drain and let the mushrooms dry slightly on lined paper towels. Or slightly pat dry. Add to bowl.
  4. Drain the corn and add to the bowl.
  5. Add cheese, minced garlic, mayo, salt and pepper per taste. Mix well and serve right away or store in the fridge till ready to serve!
