Even if your not a mushroom lover, this salad will win you over! It is everything you want in a salad. Fresh, garlicky, creamy, and very filling! And the best part is you can make it in advance.
Ingredients
- 16 ounces boneless pork loin chop
- 30 ounce can marinated mushrooms
- 1 can of sweet corn
- 1.5-2 cups of shredded mozzarella or mexican cheese
- 5-6 garlic cloves minced
- 5-6 Tbsp Mayo
- Salt and pepper to your tasting
Instructions
- Wash and cook the meat in salted boiling water until meat is cooked through. 15-20 minutes. Let the meat cool to room temperature.
- Dice the meat into small cubes, add to large bowl.
- Rinse, drain and let the mushrooms dry slightly on lined paper towels. Or slightly pat dry. Add to bowl.
- Drain the corn and add to the bowl.
- Add cheese, minced garlic, mayo, salt and pepper per taste. Mix well and serve right away or store in the fridge till ready to serve!
