Sweet, tangy and crunchy salad that is so addicting! It is so quick and easy to make, using the simplest ingredients! And the best part is that you can make it days in advance and the next few weeks!
Ingredients
- 1 medium green cabbage
- 2 Large bell peppers or 12-14 mini ( you can use multiple colors)
- 5 Medium carrots
- 1 medium sweet onion (optional, if you love onions)
- 3-4 garlic cloves minced
- 2 cups water (marinade)
- 1/2 cup oil (marinade)
- 2/3 cup vinegar (marinade)
- 1/2 cup sugar (marinade)
- 1 1/2 tbsp salt (marinade)
Instructions
- Finely shred the cabbage into a large bowl.
- Thinly slice the bell peppers and grate the carrots, add to bowl.
- Thinly slice the onions, add to bowl.
- Mince garlic cloves and add to the bowl.
- Add all marinade ingredients to a saucepan and bring to a boil.
- Pour over the cabbage mixture and stir to combine.
- Store cabbage salad in jars or containers with firm lids. Make sure the marinade covers the cabbage. Refrigerate before serving!
