With its mix of vibrant colors and flavors, these Marinated Sweet Peppers are a crowd pleaser! These are super easy to make and can be prepared days in advance!

Ingredients:
- 1.5 lb mini sweet peppers
- 6 Tbsp sugar
- 2 Tbsp salt
- 6-8 garlic cloves minced
- 1¼ cup white vinegar
- 1 cup cold water
- 1/2 cup parsley chopped
- 1/2 cup dill chopped
- 1 Tbsp olive oil to sauté
Instructions
- Preheat large skillet with oil on medium-high heat. Add peppers and sear for 4-5 minutes per side. (You want them golden brown on both sides).
- In a bowl or jar mix together the vinegar, water, garlic, sugar, salt and fresh herbs. Shake or mix well until combined sugar and salt has dissolved.
- Add all the peppers to a large mason jar and add the Marinade. Cover and marinate overnight in the fridge. Serve and Enjoy!
