Marinated Sweet Peppers

With its mix of vibrant colors and flavors, these Marinated Sweet Peppers are a crowd pleaser! These are super easy to make and can be prepared days in advance!

Ingredients:

  • 1.5 lb mini sweet peppers
  • 6 Tbsp sugar
  • 2 Tbsp salt
  • 6-8 garlic cloves minced
  • 1¼ cup white vinegar
  • 1 cup cold water
  • 1/2 cup parsley chopped
  • 1/2 cup dill chopped
  • 1 Tbsp olive oil to sauté

Instructions

  1. Preheat large skillet with oil on medium-high heat. Add peppers and sear for 4-5 minutes per side. (You want them golden brown on both sides).
  2. In a bowl or jar mix together the vinegar, water, garlic, sugar, salt and fresh herbs. Shake or mix well until combined sugar and salt has dissolved.
  3. Add all the peppers to a large mason jar and add the Marinade. Cover and marinate overnight in the fridge. Serve and Enjoy!
