Zucchini Appetizer Bites

These delicious Zucchini bites are so quick and easy to make! The perfect finger food or appetizer for your next party, brunch or just a quick healthy snack!

Ingredient’s

  • 1 Large Zucchini
  • 1 large tomato  
  • 1-2 cups mozzarella 
  • 2-3 garlic cloves 
  • 1 cup flour 
  • 1-2 eggs (i used 1.5)
  • Salt and pepper per taste 
  • 1/4- 1/2 cup Oil
  • Fresh Dill or any other fresh herbs, optional

Instructions

  1. Wash and dry the zucchini and tomato.
  2. Slice the zucchini into 1/3 inch pieces. Lightly season with salt and pepper.
  3. Add flour to one bowl and crack the eggs into another separate bowl. Season both lightly and mix well.
  4. Dredge each Zucchini piece into the flour first shaking off excess. Then dip into egg and back into flour. (This will help the zucchini be more crispy and prevent it from getting moist fast).
  5. In a large skillet, heat up oil on low-medium heat.
  6. Add zucchini pieces one by one. Fry for 1-2 minutes per side or until golden brown.
  7. Transfer to a plate lined with paper towel. Let them cool to room temperature.
  8. Slice tomatoes. Tap with paper towel.
  9. Mix your mayo, cheese and garlic. Season per taste.
  10. Assemble the zucchini bites. Spread about 1/2 Tbsp of cheese mixture onto each zucchini piece. Top with a slice of tomato, and season lightly. Optional, sprinkle fresh dill. Serve right away!
